I'm here again with one ofy favourite dishes.... Native Jollof Rice or Palm Oil rice.... If gotten right, it's sinfully delicious, otherwise.....#nauknow
So on to the preparation method now
Ingredients :
- Rice
- Palm oil
- Onions
- Fresh pepper
- Smoked fish
- Seasoning cubes
- Salt
- Crayfish
- Scent leaf
Method :
- Wash Rice and par boil, strain and leave in sieve
- In another pan put in 3 laddles of oil
- Add fresh pepper
- Add onions
- Add Crayfish
- Add seasoning cube
- Stir intermittently
- Wash smoked fish with salt and hot water and add to the broth (gently stir at this point so fish doesn't break into shreds)
- In another pot, add rice, and turn broth into the rice and add water .... stir lightly (this shouldn be done on work top,not on the burner
- After stirring, taste and correct seasoning If necessary, then return to the burner
- Cook on medium heat for about 20-25 minutes
- When it's almost ready, u add your scent leaf, and Voila!!! You hav your "Native Jollof Rice"
N/B: You can serve with additional protein eg stewed beef, snail or whatever is available, if not, the smoked fish in the mix is sufficient
